  • 1 small onion, finely chopped
  • 4 tablespoons (56 g) melted butter
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (1 g) black pepper
  • 1/2 teaspoon (1 g) garlic powder (optional)
  • Optional add-ins:
  • 1/4 cup (15 g) chopped green onions
  • 1/2 cup (60 g) cooked and crumbled bacon bits
  • 1 small diced jalapeño

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine frozen hash browns (no thawing needed).
  3. Stir in full-fat sour cream until well mixed.
  4. Add shredded sharp cheddar cheese and cream of chicken soup. Fold gently to combine.
  5. Mix in finely chopped onion, salt, black pepper, and garlic powder if using.
  6. Pour melted butter into the mixture and fold to distribute evenly.
  7. Spread the mixture evenly in the prepared baking dish, pressing down gently.
  8. Bake uncovered for about 45 minutes until the top is bubbling and golden brown with crispy edges.
  9. Optional: In the last 5 minutes, sprinkle additional shredded cheddar or chopped green onions on top.
  10. Let the casserole rest for about 10 minutes before serving to set.

Do not thaw hash browns to maintain crispiness. Use full-fat sour cream for best flavor and texture. Butter the baking dish well to help crisp edges.
