  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/3 cup (30 grams) grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  3. In a mixing bowl, combine frozen broccoli, olive oil, minced garlic, salt, and black pepper. Toss well to coat evenly.
  4. Spread the broccoli florets in a single layer on the prepared baking sheet, avoiding crowding.
  5. Roast in the oven for 20 minutes, flipping or shaking the broccoli at the 10-minute mark for even browning.
  6. Remove the baking sheet and sprinkle grated Parmesan cheese evenly over the broccoli. Add red pepper flakes and lemon zest if using.
  7. Return the broccoli to the oven and roast for an additional 5-7 minutes until the Parmesan forms a crispy, golden crust and broccoli is tender but slightly firm.
  8. Remove from oven and let cool for a couple of minutes to allow the cheese to crisp up further.
  9. Serve warm as a side dish or add to grain bowls or pasta for an easy upgrade.

Notes

Do not thaw broccoli before roasting to keep it crispy. Use plenty of olive oil and roast at high heat (425°F) for best caramelization. Flip halfway through roasting for even browning. Watch the Parmesan carefully in the last minutes to avoid burning. For a dairy-free version, substitute Parmesan with nutritional yeast. Reheat leftovers in the oven to restore crispness; avoid microwaving.
