  • 3 large eggs, room temperature
  • 1/2 cup (120 ml) vegetable oil or melted butter

  • 1/2 cup (115 g) unsalted butter, softened
  • 1 1/2 cups (190 g) powdered sugar, sifted
  • 12 tablespoons (1530 ml) milk or cream (dairy-free milk optional)
  • 1 teaspoon vanilla extract
  • 12 oz (340 g) white chocolate chips or melting wafers
  • Red candy melts or red food coloring mixed with white chocolate for stitching
  • 1215 cake pop sticks

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, combine cake mix, eggs, oil, and water. Mix until smooth, about 2 minutes.
  2. Pour batter into greased 9×13 inch pan and bake for 30-35 minutes or until toothpick comes out clean. Cool completely (about 1 hour).
  3. Crumble cooled cake into fine crumbs in a large bowl.
  4. In a separate bowl, beat softened butter, powdered sugar, milk, and vanilla extract until creamy. Adjust milk to get spreadable consistency.
  5. Gradually add frosting to cake crumbs, mixing until dough-like texture that holds when rolled but not sticky (about 1/2 cup frosting).
  6. Roll mixture into 1 1/4 inch diameter balls. Place on parchment-lined baking sheet and chill at least 30 minutes.
  7. Melt white chocolate chips in microwave-safe bowl in 20-second bursts, stirring until smooth and fluid but not hot.
  8. Dip tip of each cake pop stick into melted white chocolate, then insert halfway into chilled cake balls. Chill 15 minutes to set.
  9. Dip each cake pop fully into melted white chocolate, tap off excess, and stand upright on parchment or styrofoam. Let coating set about 20 minutes.
  10. Melt small amount of white chocolate or red candy melts tinted with red food coloring. Pipe two curved lines and short diagonal stitches to mimic baseball stitching.
  11. Let decorations set at room temperature or chill briefly until hardened.
