These fudgy, chewy crinkle cookies come together quickly with just three simple ingredients, making them a perfect last-minute chocolatey snack.

Ingredients

Scale
  • 18 oz brownie mix (about 510 g)
  • 2 large eggs, room temperature
  • ½ cup powdered sugar (about 60 g)
  • Optional: 1 tsp vanilla extract
  • Optional: pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the brownie mix and eggs in a bowl using a hand mixer on medium speed for 1-2 minutes or stir vigorously with a wooden spoon until fully combined and glossy.
  3. If using, stir in vanilla extract and a pinch of salt for extra flavor.
  4. Pour powdered sugar into a small bowl. Scoop out dough balls about 1.5 tablespoons (roughly 25 g) each.
  5. Roll each dough ball generously in the powdered sugar until fully coated.
  6. Place the coated dough balls on the prepared baking sheet about 2 inches apart.
  7. Bake for 10-12 minutes or until edges are set but centers still look slightly soft.
  8. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the batter to keep cookies fudgy. Keep hands powdered sugar-coated when rolling dough balls to prevent sticking. Watch baking time closely to avoid overbaking. Let cookies cool properly to develop the crinkle crust. Chilling dough for 10 minutes can help with rolling and prevent spreading. Use room temperature eggs for best results. Line baking sheet to prevent sticking.
