A quick and easy recipe for authentic street-style ground beef tacos packed with smoky, spicy, and tangy flavors, perfect for busy weeknights or casual gatherings.

  • 1 pound ground beef (80/20 blend preferred)
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin (toasted)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon dried oregano (Mexican oregano if available)
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 fresh lime
  • A small handful fresh cilantro, chopped
  • 12 small corn tortillas
  • Optional toppings: diced white onion, crumbled queso fresco, sliced radishes, favorite salsa

Instructions

  1. Toast the spices: Heat skillet over medium heat. Add ground cumin, smoked paprika, chili powder, and oregano to dry pan. Stir constantly for about 30 seconds until fragrant.
  2. Add onion and garlic: Add finely chopped onion and minced garlic with about 1 tablespoon oil. Sauté for 3-4 minutes until onion is softened and translucent, stirring frequently.
  3. Brown the beef: Crumble in ground beef. Cook for 7-8 minutes, breaking apart with a spoon, until no pink remains and beef is browned. Drain excess fat if needed.
  4. Season the beef: Sprinkle salt and black pepper to taste. Stir well. Lower heat to medium-low and simmer for 3-4 minutes to let flavors meld.
  5. Finish with lime and cilantro: Remove from heat. Squeeze juice of one lime over beef and stir in most of the chopped cilantro, reserving some for garnish.
  6. Warm the tortillas: Heat corn tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and pliable. Keep wrapped in a towel to stay soft.
  7. Assemble and serve: Spoon seasoned beef onto each tortilla. Top with diced onion, queso fresco, radishes, extra cilantro, and salsa. Serve immediately.

Notes

Toast spices before cooking to unlock deeper flavor. Do not overcrowd the pan when browning beef to get good caramelization. Always finish with fresh lime juice and cilantro for brightness. Warm tortillas just before serving and keep wrapped to stay soft. Leftover beef keeps well refrigerated for 3 days or frozen for up to 2 months.
