Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined with no lumps.
  3. In a medium bowl, beat together the milk, eggs, cottage cheese, vanilla extract, and melted butter. The cottage cheese may look slightly lumpy.
  4. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. Do not overmix; some lumps are fine.
  5. Fold in the blueberries carefully to keep pockets of fruit intact.
  6. Pour the batter evenly into the prepared baking dish.
