Ingredients

Scale
  • 1 package (3 oz / 85g) red Jello (strawberry or cherry flavor)
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 1 package (3 oz / 85g) unflavored gelatin
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 1/2 cup (120 ml) sweetened condensed milk
  • 1 tablespoon fresh lemon juice
  • 1 package (3 oz / 85g) blue Jello (blueberry or berry blue flavor)
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • Whipped cream (store-bought or homemade)
  • Fresh blueberries

Instructions

  1. Prepare the Red Layer: In a medium bowl, dissolve 1 package red Jello in 1 cup boiling water, stirring for about 2 minutes until fully dissolved. Add 1/2 cup cold water and mix. Pour the mixture evenly into clear cups, filling each about one-third full. Refrigerate for 45 minutes to 1 hour until firm but slightly tacky.
  2. Make the White Layer: Sprinkle unflavored gelatin over 1/2 cup cold water and let bloom for 5 minutes. Boil 1 cup water and dissolve the bloomed gelatin completely. Stir in sweetened condensed milk and lemon juice until smooth. Cool to room temperature (about 15 minutes) but do not set. Spoon or ladle the white mixture over the red layer, filling another third of each cup. Refrigerate for 45 minutes to 1 hour until set.
  3. Prepare the Blue Layer: Dissolve blue Jello package in 1 cup boiling water, then add 1/2 cup cold water. Cool slightly before pouring gently over the white layer to avoid mixing colors. Fill cups to the top and refrigerate at least 2 hours until fully set.
  4. Garnish and Serve: Just before serving, add a dollop of whipped cream on each cup and top with fresh blueberries.

Notes

Pour each layer only when the previous layer is firm but slightly tacky to avoid mixing colors. Use room temperature or slightly cooled gelatin mixtures before layering. Add whipped cream and fresh berries just before serving to avoid sogginess. For dairy-free, substitute sweetened condensed milk with coconut milk and use dairy-free whipped topping. Agar-agar can be used as a vegetarian alternative to gelatin following package instructions.
