Fresh Frozen Yogurt Bark with Berries and Granola

A quick and easy frozen yogurt dessert featuring creamy Greek yogurt, fresh berries, and crunchy granola, perfect for a refreshing summer snack.

Ingredients

  • 2 cups (480 ml) Greek yogurt (full-fat preferred)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract (optional)
  • 1 cup (150 g) mixed berries (blueberries, raspberries, sliced strawberries; fresh or frozen)
  • 1/2 cup (60 g) crunchy granola
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper, extending over the sides for easy lifting.
  2. In a medium bowl, stir together Greek yogurt, honey or maple syrup, and vanilla extract until smooth and creamy. Adjust sweetness to taste.
  3. Pour the yogurt mixture onto the prepared tray and spread evenly to about 1/4-inch (6 mm) thickness.
  4. Sprinkle mixed berries evenly over the yogurt, gently pressing them in to keep their shape.
  5. Scatter crunchy granola and optional chia seeds over the berries.
  6. Freeze the tray for at least 4 hours or overnight until the yogurt is completely firm.
  7. Lift the frozen bark out using the parchment paper edges and break into irregular chunks. Optionally, score with a sharp knife before freezing for neater pieces.
  8. Serve immediately or store in an airtight container in the freezer.

Notes

Use thick Greek yogurt or strain regular yogurt to avoid icy texture. Add granola just before freezing to keep it crunchy. Press berries gently to hold bark together. Store in airtight container layered with parchment paper to prevent sticking. Can be customized with dairy-free yogurt and different fruits or nuts.
