  • 2 slices whole grain or sourdough bread, toasted
  • ½ cup (120g) small-curd cottage cheese
  • 1 medium ripe tomato, thinly sliced
  • 1 teaspoon everything seasoning
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon fresh basil or chives, chopped (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt

Instructions

  1. Toast the bread slices in a toaster or under the broiler until golden brown and crispy, about 3-4 minutes.
  2. While the bread toasts, thinly slice the tomato and lay the slices flat on a plate. Sprinkle with a pinch of sea salt and freshly ground black pepper. Let sit for about 3 minutes.
  3. Scoop the cottage cheese into a small bowl. Stir in the olive oil and a pinch of black pepper. Optionally, mix in chopped fresh herbs.
  4. Spread the seasoned cottage cheese evenly over each toasted bread slice.
  5. Arrange the tomato slices on top of the cottage cheese, overlapping slightly.
  6. Sprinkle everything seasoning generously over the tomatoes and cheese.
  7. Scatter chopped fresh basil or chives over the top.
  8. Serve immediately for best texture and flavor.

Notes

If tomatoes are watery, blot them with a paper towel before placing on toast to prevent sogginess. Letting everything seasoning sit on the toast for a minute enhances flavor. Use small-curd cottage cheese for creamier texture. Optional herbs add freshness but can be omitted.
