  • ¼ cup granulated sugar
  • 4 large eggs, room temperature
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup fresh key lime juice (about 2025 limes)
  • 1 tablespoon lime zest
  • Whipped cream or coconut whipped cream (optional)
  • Extra shredded coconut, toasted (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, letting the edges hang over for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, shredded sweetened coconut, melted unsalted butter, and granulated sugar. Stir until the mixture looks like wet sand and holds together when pressed.
  3. Press the crust mixture firmly into the bottom of the prepared pan using the back of a spoon or a flat-bottomed glass.
  4. Bake the crust for 10 minutes until slightly toasted and firm.
  5. While the crust bakes, whisk the eggs in a large bowl until frothy. Add sweetened condensed milk, fresh key lime juice, and lime zest. Mix until smooth and creamy.
  6. Pour the filling over the warm crust, letting the crust cool for a minute if needed.
  7. Bake for 15-18 minutes, or until the filling is just set and slightly jiggly in the center.
  8. Remove from oven and cool completely at room temperature, then refrigerate for at least 2 hours or overnight.
  9. Lift the bars out using the parchment edges and slice into 16 squares with a sharp knife, wiping the knife between slices.
  10. Top with whipped cream and toasted coconut if desired before serving.
