Refreshing Watermelon Mint Lime Slushie

A quick and easy homemade summer drink combining juicy watermelon, fresh mint, and zesty lime for a refreshing icy treat perfect for hot days.

Ingredients

  • 4 cups seedless watermelon cubes (about 600g or 21 oz)
  • 1012 fresh mint leaves, washed
  • Juice of 2 medium limes (about 3 tablespoons or 45ml)
  • 12 tablespoons honey or agave syrup (optional)
  • 1.5 to 2 cups ice cubes (about 350–475ml)
  • Pinch of sea salt (optional)
  • Splash of sparkling water (optional)

Instructions

  1. Cube the watermelon into small chunks, removing the rind carefully.
  2. Rinse and gently pat dry the fresh mint leaves, then roughly tear them to release oils.
  3. Squeeze juice from 2 medium limes, avoiding seeds.
  4. Add watermelon cubes, torn mint leaves, lime juice, and honey or agave syrup (if using) into a blender.
  5. Add ice cubes and pulse blend on high for 30 seconds to 1 minute until smooth and slushy. Add a splash of cold water or sparkling water if needed to adjust texture.
  6. Taste and adjust sweetness or lime juice as desired.
  7. Serve immediately in chilled glasses, garnished with a sprig of mint or a lime wheel.

Notes

Use ripe watermelon for best sweetness. Crush ice beforehand if blender struggles. Adjust sweetness after blending. Serve immediately for best texture. Leftovers can be stored in fridge up to 24 hours but will need re-blending.
