  • 1 cup rolled oats (90 grams)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg, room temperature
  • ½ cup milk (whole or 2%)
  • 1 tablespoon Worcestershire sauce
  • ¼ cup ketchup (for topping and mix)
  • 1 teaspoon dried Italian herbs (or mix of oregano, basil, thyme)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the oats and milk. Let them soak for about 5 minutes until the oats soften.
  3. Add the ground beef, chopped onion, minced garlic, beaten egg, Worcestershire sauce, dried Italian herbs, salt, and pepper. Mix gently but thoroughly using your hands or a spoon. Avoid overmixing.
  4. Transfer the mixture into a 9×5 inch loaf pan, pressing it down evenly. Alternatively, shape the loaf freehand on a lined baking sheet about 8 inches long and 4 inches wide.
  5. Spread the ketchup evenly over the top of the loaf.
  6. Bake in the preheated oven for 55 to 65 minutes. Check doneness with a meat thermometer; the internal temperature should reach 160°F (71°C).
  7. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
