Creamy, spiced overnight oats that taste like fall in a jar. Made with just 5 simple ingredients and 5 minutes of prep, this easy breakfast is perfect for busy mornings and a crowd-pleaser even for oatmeal skeptics.

Ingredients

Scale
  • ½ cup rolled oats (old-fashioned)
  • ½ cup milk (any kind; whole milk for creamiest)
  • ¼ cup plain Greek yogurt (full-fat or 2%)
  • ¼ cup pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 teaspoon pumpkin pie spice
  • Optional: pinch of salt, 1 teaspoon maple syrup or honey, 1 tablespoon chia seeds

Instructions

  1. Add ½ cup rolled oats to a jar or container with a lid.
  2. Spoon in ¼ cup pumpkin puree.
  3. Add ¼ cup plain Greek yogurt.
  4. Pour in ½ cup milk of your choice.
  5. Sprinkle in 1 teaspoon pumpkin pie spice.
  6. Stir everything together thoroughly until the mixture is uniform in color (a consistent pale orange). Use a small whisk or spoon, making sure no streaks of yogurt or pumpkin remain.
  7. If using, stir in a pinch of salt, 1 teaspoon maple syrup or honey, or 1 tablespoon chia seeds.
  8. Seal the jar and refrigerate for at least 4 hours, preferably overnight.
  9. In the morning, stir well. Serve cold or microwave for 45-60 seconds (remove lid first) if you prefer warm oats. Add toppings like chopped pecans or a drizzle of maple syrup if desired.

Notes

Stir thoroughly to avoid pockets of pure pumpkin puree. For best texture, use rolled oats (not instant or steel-cut). The oats keep in the fridge for up to 5 days; stir in a splash of milk if too thick. For a vegan version, use thick plant-based yogurt and non-dairy milk, and add an extra tablespoon of chia seeds. For a pumpkin spice latte version, replace ¼ cup of milk with cold brew coffee.
