These crispy brown sugar bacon wrapped smokies are the ultimate party appetizer. With just three main ingredients and a simple technique, they deliver a perfect sweet and savory bite that disappears in minutes.

  • 1 (14 oz) package little smoked sausages (smokies)
  • 1 (12 oz) package thin-cut bacon
  • 1/2 cup packed light brown sugar
  • 2 tablespoons maple syrup (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with aluminum foil and place a wire rack on top. If using toothpicks, soak them in water for 10 minutes.
  2. Partially cook the bacon: Place bacon strips on a microwave-safe plate lined with paper towels. Microwave on high for 2-3 minutes until just starting to render fat but still pliable. Let cool slightly.
  3. Cut each bacon strip into three equal pieces.
  4. Wrap one piece of bacon around each little smoked sausage, overlapping the ends slightly. Secure with a toothpick.
  5. Pour the packed brown sugar (and smoked paprika and cayenne, if using) into a shallow bowl. Roll each bacon-wrapped smokie in the brown sugar, pressing gently to coat. Place seam-side down on the wire rack.
  6. In a small bowl, mix maple syrup with a pinch of smoked paprika (if using). Lightly brush or drizzle over the top of each smokie.
  7. Bake for 25-35 minutes, until bacon is deep golden brown and crispy. Check at 20 minutes; if sugar is browning too quickly, tent loosely with foil.
  8. Let cool on the wire rack for 5 minutes. The caramelized sugar will harden as they cool. Remove toothpicks before serving, or leave them in for easy grabbing.

Par-cooking the bacon is key for crispiness. Use thin-cut bacon for best results. Soak toothpicks in water to prevent burning. For a spicier version, add cayenne or red pepper flakes.
