Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on long sides. Lightly grease parchment and exposed pan sides.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until evenly distributed.
  3. In a large mixing bowl, beat softened butter and brown sugar together until light and fluffy, about 2-3 minutes.
  4. Add eggs one at a time, beating well after each addition. Scrape down sides of bowl. Stir in vanilla extract.
  5. Alternate adding dry ingredients and apple cider: add about one-third of flour mixture, stir until just combined, then add half the cider. Repeat with another third of flour, remaining cider, and final third of flour. Mix until just combined; do not overmix.
  6. Pour batter into prepared loaf pan and spread evenly. Tap pan gently on counter to release air bubbles.
  7. Bake for 50-60 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil at 40 minutes.
  8. Let cake cool in pan for 10 minutes, then lift out using parchment and transfer to a cooling rack. Cool completely before glazing.
  9. While cake cools, make glaze: In a small saucepan, combine brown sugar, butter, and milk. Cook over medium heat, stirring constantly, until butter melts and mixture simmers. Let bubble for 2 minutes. Remove from heat, stir in vanilla and salt. Let cool about 5 minutes until thick but pourable.
  10. Pour glaze over cooled cake, letting it drip down sides. Spread evenly if needed. Let glaze set for at least 15 minutes before slicing.

Notes

Use real apple cider, not apple juice, for best flavor. Room temperature ingredients are important for proper texture. Do not overmix batter. Glaze should cool slightly before pouring to avoid running off. Cake tastes even better the next day. For gluten-free, use a 1-to-1 gluten-free flour blend. For dairy-free, use vegan butter and oat or almond milk.
