This loaded buffalo chicken dip is the ultimate game day appetizer—creamy, spicy, and packed with tender chicken and melted cheese. Ready in about 45 minutes, it’s a crowd-pleaser that disappears fast at any gathering.

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 packet ranch dressing mix
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions, thinly sliced
  • Salt and black pepper to taste
  • Tortilla chips, for serving
  • Celery sticks and carrot sticks, for serving
  • Optional: extra hot sauce and blue cheese crumbles

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Soften the cream cheese by microwaving in 10-second bursts until pliable.
  3. Shred the cooked chicken using two forks; you should have about 2 cups.
  4. In a large mixing bowl, beat the softened cream cheese and sour cream with a hand mixer until smooth (1-2 minutes).
  5. Add the buffalo wing sauce and ranch dressing mix; mix until fully incorporated.
  6. Fold in the shredded chicken, 1/2 cup of the sharp cheddar, and all of the mozzarella. Season with a pinch of salt and pepper if needed.
  7. Spread the mixture evenly in the prepared baking dish.
  8. Sprinkle the remaining 1/2 cup of sharp cheddar over the top.
  9. Bake for 20-25 minutes, until hot and bubbly and the cheese is melted and golden at the edges.
  10. Let cool for 2-3 minutes, then garnish with sliced green onions. Serve immediately with tortilla chips, celery, and carrot sticks.

Notes

For a thicker dip, add an extra 2 oz of cream cheese and reduce sour cream to 1/4 cup. To make ahead, prepare up to step 8, cover, and refrigerate; add 5-10 minutes to baking time. For a slow cooker version, combine all ingredients (except green onions) and cook on low for 2-3 hours.
