  • 1 cup fresh mango chunks, peeled and diced (Ataulfo or Honey mangoes recommended)
  • 1 medium fresh dragon fruit, peeled and diced (or frozen dragon fruit as substitute)
  • 1 cup white grape juice
  • 1/4 cup green coffee extract or cold brew concentrate
  • 2 tablespoons simple syrup (equal parts sugar and water, adjust to taste)
  • 2 tablespoons fresh lime juice
  • 1 cup cold water or sparkling water (optional)
  • Ice cubes as needed

Instructions

  1. Peel and dice 1 ripe mango into small chunks. Peel the dragon fruit and cut it into cubes. Set aside about a quarter cup of mango chunks for garnish if desired.
  2. Place the diced dragon fruit in a blender or food processor. Add 1 cup white grape juice and blend until smooth, about 1-2 minutes.
  3. In a large mixing pitcher, combine the dragon fruit puree, 1/4 cup green coffee extract, 2 tablespoons simple syrup, and 2 tablespoons fresh lime juice. Stir gently but thoroughly to mix all flavors. Adjust sweetness or tartness as needed.
  4. Slowly pour in 1 cup cold water or sparkling water. Stir lightly to keep some fizz if using sparkling water. Add plenty of ice cubes to chill the mixture well.
  5. Divide the mango chunks evenly between 2 tall glasses. Pour the mixed refresher over the mango chunks, letting the fruit float and settle naturally.
  6. Give a gentle stir before serving to distribute the mango chunks. Optionally, garnish with a thin lime wheel or a small dragon fruit piece on the rim.

Notes

For vegan or refined sugar-free options, replace simple syrup with agave nectar or maple syrup. For caffeine-free, omit green coffee extract and add extra grape juice or water. Chill glasses ahead for best experience. Avoid over-blending mango chunks to keep texture. Store base and mango chunks separately if making ahead.
