  • 1/2 cup packed brown sugar (light or dark)
  • 1 tablespoon lemon juice

  • 2 tablespoons all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven. Lightly grease your baking dish with butter or non-stick spray.
  2. Peel and slice your apples into 1/4-inch thick slices. Toss the slices in a large bowl with the lemon juice to prevent browning.
  3. Add the brown sugar, cinnamon, nutmeg, and flour to the apples. Toss until every slice is coated.
  4. Transfer the apple mixture to your prepared baking dish and spread into an even layer.
  5. In a medium bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse meal with some pea-sized butter lumps remaining.
  6. Sprinkle the crumble topping evenly over the apples. Do not pack it down.
  7. Bake for 35-40 minutes, until the filling is bubbly around the edges and the topping is deep golden brown. If the topping is browning too quickly after 25 minutes, tent loosely with aluminum foil.
  8. Let the crisp rest for 10-15 minutes before serving.

Notes

For a gluten-free version, use a 1:1 gluten-free baking blend. For a vegan version, substitute butter with cold coconut oil or vegan butter. Let the crisp rest after baking to allow the juices to thicken. If using very sweet apples, reduce brown sugar by 1-2 tablespoons. Cold butter is essential for a crumbly topping.
