This sweet-and-salty snack mix combines buttery toasted Rice Chex, crunchy pretzels, and soft candy corn for the perfect fall treat. It’s quick to make, endlessly customizable, and absolutely addictive.

  • 2 cups mini pretzel twists
  • 1/2 cup unsalted butter (1 stick), melted
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups candy corn
  • 1/2 cup roasted salted peanuts (optional)

Instructions

  1. Preheat your oven to 250°F (120°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine the Rice Chex cereal and mini pretzel twists. If using peanuts, add them now. Toss gently to distribute.
  3. In a small saucepan over medium heat (or in a microwave-safe bowl in 30-second bursts), melt the unsalted butter. Whisk in the packed light brown sugar, vanilla extract, ground cinnamon, and salt until smooth and fragrant.
  4. Pour the butter mixture evenly over the cereal and pretzels. Use a spatula to gently fold everything together until every piece is coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer. Some clumps are fine.
  6. Bake for 45 minutes, stirring every 15 minutes. The mix should be dry to the touch and lightly golden when done.
  7. Let the mix cool completely on the baking sheet (at least 30 minutes). Do not add candy corn while warm.
  8. Once completely cool, transfer to a large bowl and add the candy corn. Toss gently to combine. Serve immediately or store in an airtight container.

Notes

Add candy corn only after the mix is completely cool to prevent melting. Stir every 15 minutes during baking for even toasting. Store in an airtight container at room temperature for up to 1 week. For best results, use fresh candy corn that feels soft when squeezed.
