  • 1 cup (245g) pumpkin puree (100% pure, not pumpkin pie filling)
  • 2 large eggs
  • 1 ½ cups (360ml) milk (any kind)
  • ⅓ cup (80ml) maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons melted coconut oil or butter (for greasing)
  • Optional toppings: chopped pecans, walnuts, dried cranberries, extra maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking dish with the melted coconut oil or butter, coating the bottom and sides well.
  2. In a medium bowl, mix the rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt until evenly combined.
  3. In a large bowl, whisk together the pumpkin puree, eggs, milk, maple syrup, and vanilla extract until smooth.
  4. Pour the dry ingredients into the wet ingredients and fold with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Pour the batter into the prepared baking dish and spread evenly. If using toppings, sprinkle them on top and press in slightly.
  6. Bake on the middle rack for 25-30 minutes, until the top is golden brown and the edges are set. The center should have a slight jiggle and will firm up as it cools.
