  • 2 tbsp Worcestershire sauce

  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/2 cup BBQ sauce (e.g., Sweet Baby Ray’s)
  • 1 lb baby red potatoes, halved or quartered if large
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line your sheet pan with parchment paper.
  2. In a bowl, toss the halved baby red potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them out on one side of the sheet pan in a single layer.
  3. In a mixing bowl, combine ground beef, breadcrumbs, milk, beaten egg, chopped onion, minced garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently until just combined.
  4. Shape the meat mixture into a loaf shape (about 8×4 inches) on the empty side of the sheet pan next to the potatoes. Pat down gently for even thickness.
  5. Spoon the BBQ sauce evenly over the top of the meatloaf, spreading to all edges.
  6. Bake in the preheated oven for 35-40 minutes, until the meatloaf reaches an internal temperature of 160°F (71°C) and the potatoes are golden and crispy. Flip potatoes halfway through baking for extra crispiness.
  7. Let the meatloaf rest for 5-10 minutes before slicing.
  8. Garnish potatoes with fresh parsley if desired, slice the meatloaf, and serve warm.
