  • 3 tablespoons unsalted butter (42g), cold and cut into small cubes
  • 2 tablespoons chopped pecans or walnuts (15g) (optional)
  • 1 tablespoon maple syrup (15ml) (optional)
  • ⅛ teaspoon cardamom (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place ramekins or a baking dish on a small baking sheet.
  2. Prepare the apple filling: Peel and dice the apple into ½-inch cubes. In a small bowl, combine the diced apple with granulated sugar, cinnamon, nutmeg, lemon juice, and flour. Stir until coated.
  3. Make the oatmeal crumble topping: In a medium bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse sand with some pea-sized butter pieces.
  4. Assemble the crisps: Divide the apple mixture evenly between two 8-ounce ramekins (or use one larger dish). Sprinkle the topping evenly over the apples.
  5. Bake for 25-30 minutes, until the topping is deep golden brown and the filling is bubbly around the edges. If topping browns too quickly, tent with foil.
  6. Cool on a wire rack for 5-10 minutes before serving.
  7. Serve warm, optionally topped with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

For best results, use old-fashioned rolled oats, not quick oats. Cold butter is essential for a crumbly topping. Let the crisp rest for 5-10 minutes after baking to allow the filling to set.
