  • 1/2 cup green onions, sliced
  • 1 cup frozen peas, thawed
  • 1/2 cup bell pepper (any color), diced
  • 1 cup (8 oz) full-fat sour cream
  • 1/2 cup (4 oz) mayonnaise
  • 1/4 cup milk (whole or 2%)
  • 1 packet (1 oz) ranch seasoning mix
  • 1 tablespoon pickle juice (from a jar of dill pickles)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the bacon: Lay the bacon strips in a cold skillet. Turn the heat to medium and cook, flipping occasionally, until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain. Once cool, crumble or chop into bite-sized pieces.
  2. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the rotini and cook according to package directions until al dente (usually 8-10 minutes). Drain the pasta in a colander and rinse briefly with cool water to stop the cooking process. Shake off as much water as possible.
  3. Dress the warm pasta: While the pasta is still warm, transfer it to a large mixing bowl. Add about 1/4 cup of the prepared dressing (you’ll make the dressing in the next step) and toss gently to coat. Set aside to cool for about 10 minutes.
  4. Make the dressing: In a medium bowl, whisk together the sour cream, mayonnaise, milk, ranch seasoning mix, pickle juice, garlic powder, and black pepper. Whisk until smooth and creamy. Taste and adjust seasoning if needed.
  5. Prep the add-ins: While the pasta is cooling, halve the cherry tomatoes. Dice the red onion and bell pepper. Slice the green onions. Thaw the frozen peas by running them under cool water in a colander for a minute. Cube the cheddar cheese into small, bite-sized pieces.
  6. Combine everything: Add the crumbled bacon, cubed cheddar, cherry tomatoes, red onion, green onions, thawed peas, and bell pepper to the bowl with the cooled pasta. Pour the remaining dressing over the top.
  7. Fold gently: Use a rubber spatula to fold everything together until all the ingredients are evenly coated with dressing. Be gentle—you don’t want to break up the pasta or mash the tomatoes.
  8. Chill and rest: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour before serving. This resting time is crucial for the flavors to meld.
  9. Give it a final stir: Just before serving, give the salad a good stir. Taste and adjust seasoning if needed. Garnish with extra sliced green onions or a sprinkle of paprika for color.

Notes

For best results, cook bacon until very crispy and let it cool completely before adding to the salad. The warm pasta trick (tossing with a little dressing while still warm) helps the pasta absorb flavor. If the salad seems dry after chilling, stir in a splash of milk or a little extra mayonnaise. Do not freeze this salad.
