This creamy buffalo chicken dip with cream cheese and ranch is the perfect game day appetizer. It’s quick, easy, and has the ideal balance of spicy and creamy with a bubbly cheese top.

  • 16 oz cream cheese, softened to room temperature
  • 1 cup ranch dressing
  • 1/2 cup buffalo hot sauce (such as Frank’s RedHot)
  • 2 cups cooked chicken, shredded or finely chopped
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese
  • Optional: 2 green onions, thinly sliced
  • Optional: 1/4 cup crumbled blue cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened cream cheese with an electric hand mixer on medium speed until completely smooth, about 1-2 minutes.
  3. Add the ranch dressing and buffalo hot sauce to the bowl. Beat on low speed until combined and the mixture is a uniform orange color. Taste and adjust heat if desired.
  4. Fold in the shredded chicken, 1 1/2 cups of the mozzarella cheese, and all of the cheddar cheese using a spatula until evenly distributed.
  5. Transfer the mixture to a 9×13 inch baking dish and spread into an even layer.
  6. Sprinkle the remaining 1/2 cup of mozzarella cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the dip is hot and bubbly around the edges and the cheese on top is melted and starting to turn golden.
  8. Remove from the oven and let it rest for 5 minutes.
  9. Garnish with sliced green onions and crumbled blue cheese if using. Serve hot.

Notes

Don’t skip softening the cream cheese to avoid lumps. Shred your own cheese for the smoothest melt. Let the dip rest for 5 minutes after baking to set up properly. For a make-ahead option, assemble the dip in the baking dish, cover, and refrigerate for up to 24 hours; add about 10 minutes to the baking time. For a slow cooker version, combine all ingredients except reserved mozzarella and cook on low for 2-3 hours, then add remaining cheese during the last 15 minutes.
