A quick and easy no-bake dessert dip that combines the flavors of caramel apple and cheesecake, perfect for parties or a late-night craving.

  • 1/4 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 tsp vanilla extract
  • 2 tbsp apple cider
  • 1/4 tsp ground cinnamon
  • Pinch of sea salt
  • 1 medium Honeycrisp or Granny Smith apple, finely chopped
  • 1/2 cup toffee bits
  • 1 tbsp lemon juice

Instructions

  1. Soften the cream cheese and butter by leaving them at room temperature for at least 45 minutes, or microwave in 10-second bursts until just softened.
  2. In a medium mixing bowl, combine the softened cream cheese, softened butter, and brown sugar. Beat with an electric mixer on medium speed for 2-3 minutes until light, fluffy, and completely smooth. Scrape down the sides of the bowl halfway through.
  3. Add the vanilla extract, apple cider, ground cinnamon, and a pinch of sea salt. Beat on low speed until well combined.
  4. Finely chop the apple into small, bite-sized pieces (about 1/4-inch dice). Toss the chopped apple in a small bowl with the lemon juice to prevent browning.
  5. Using a rubber spatula, gently fold the chopped apple and toffee bits into the cream cheese mixture until evenly distributed.
  6. Chill the dip for at least 30 minutes to allow flavors to meld and the dip to firm up slightly.
  7. Just before serving, transfer the dip to a serving bowl. Garnish with extra toffee bits, a drizzle of caramel sauce, and a light dusting of cinnamon. Serve with apple slices, graham crackers, pretzels, or vanilla wafers.

Notes

For best results, use full-fat cream cheese and butter at room temperature. The dip can be made up to 24 hours ahead and stored in the refrigerator. Stir before serving. For a dairy-free version, use vegan cream cheese and vegan butter. For a gluten-free option, serve with apple slices or gluten-free cookies.
