Instructions

  1. Prepare the Vegetables (10 minutes): Rinse and dry the cabbage and carrots. Shred the cabbage finely using a sharp knife or mandoline. Peel and grate the carrots using a box grater or food processor. Thinly slice the green onion, if using.
  2. Make the Dressing (5 minutes): In a medium bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, celery seed, salt, and pepper until smooth and creamy with no lumps.
  3. Toss the Coleslaw (2 minutes): Add the shredded cabbage, carrots, and green onion to a large mixing bowl. Pour the dressing over the veggies. Gently toss using a spatula or your hands until everything is evenly coated, being careful not to mash the cabbage.
  4. Chill Before Serving (at least 30 minutes): Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let flavors meld and cabbage soften slightly without losing crunch.
  5. Final Taste and Adjustments: Before serving, taste the coleslaw and adjust seasoning if needed. Drain any excess liquid if the coleslaw seems watery.

If coleslaw is watery after chilling, drain excess liquid before serving. Prepare a few hours ahead for best flavor but not too far in advance to avoid sogginess. For dairy-free, substitute mayo with vegan mayo and honey with maple syrup. Greek yogurt can replace mayo for a lighter version.
