Creamy Marry Me Chicken Recipe with Sun-Dried Tomatoes

A quick and easy creamy chicken dish featuring sun-dried tomatoes, garlic, and fresh basil, perfect for a comforting weeknight dinner or date night.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds or 700g), thin-cut preferred
  • ½ cup (about 80g) sun-dried tomatoes, chopped, packed in oil, drained but keep some oil
  • 1 cup (240ml) heavy cream
  • ½ cup (120ml) chicken broth
  • 3 cloves garlic, minced
  • ½ cup (50g) grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 2 tablespoons olive oil (use oil from sun-dried tomatoes jar if possible)
  • 2 tablespoons butter
  • Salt and freshly ground black pepper to taste
  • Optional: red pepper flakes for a subtle kick
  • Optional: coconut cream instead of heavy cream for dairy-free twist

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper. If breasts are thick, slice in half horizontally.
  2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken breasts and sear for 5-6 minutes on each side until golden brown and cooked through (internal temperature 165°F or 74°C). Remove chicken and set aside.
  3. Lower heat to medium. In the same pan, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn.
  4. Add chopped sun-dried tomatoes and stir for 1-2 minutes to release flavor.
  5. Pour in chicken broth and scrape up browned bits from the pan. Let simmer for 2 minutes to reduce slightly.
  6. Stir in heavy cream and grated Parmesan cheese. Simmer gently for 3-5 minutes until sauce thickens and coats the back of a spoon. Adjust salt and pepper to taste.
  7. Stir in fresh basil and return chicken breasts to the skillet. Spoon sauce over chicken, cover loosely, and simmer for another 3 minutes to meld flavors and reheat chicken.
  8. Serve hot with extra sauce spooned over the top, paired with mashed potatoes, pasta, or steamed vegetables.

Notes

Do not overcrowd the pan when searing chicken to maintain a crispy crust. Use the oil from the sun-dried tomatoes jar to add flavor and help cook garlic gently. Simmer sauce gently to prevent cream from separating. Add fresh basil at the end to preserve brightness. Taste and adjust seasoning as you go. If sauce is too thin, simmer longer. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
