  • 1 cup long-grain white rice, uncooked
  • 1 medium yellow onion, diced
  • 3 to 4 garlic cloves, minced
  • 2 cups beef broth, low-sodium
  • ½ cup heavy cream
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the diced onion and cook for about 3 minutes until translucent and fragrant.
  2. Add the ground beef to the skillet. Break it up with a wooden spoon and cook for 5 to 7 minutes, stirring occasionally, until nicely browned. Drain off excess fat if needed.
  3. Stir in the minced garlic, Italian seasoning, paprika, salt, and pepper. Cook for about 30 seconds until fragrant.
  4. Add the tomato paste and stir into the beef mixture. Cook for 1 minute to deepen flavor.
  5. Pour in the beef broth and undrained diced tomatoes. Stir together, scraping up any browned bits from the bottom of the skillet.
  6. Add the uncooked rice and stir until evenly distributed. Bring to a boil, then reduce heat to low. Cover the skillet with a tight-fitting lid.
  7. Let it simmer for 18 to 20 minutes. Do not lift the lid during this time.
  8. After 18 minutes, check the rice. It should be tender and most of the liquid absorbed. If still firm, cover and cook for another 2 to 3 minutes.
  9. Remove the skillet from heat. Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
  10. Taste and adjust seasoning if needed. Garnish with fresh parsley if desired. Serve hot.

Notes

Brown the beef properly for best flavor. Use long-grain white rice for perfect texture. Do not lift the lid while simmering. Season in layers for complex flavor. Adjust heat to maintain a gentle simmer. If rice is undercooked but liquid is gone, add a splash more broth and cook covered for a few extra minutes.
