Instructions

  1. Pat the chicken pieces dry with paper towels and season with salt and pepper. (5 minutes)
  2. Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add chicken pieces in a single layer and cook until golden brown, about 4–5 minutes per side. Cook in batches if needed. Remove chicken and set aside. (10 minutes)
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir constantly to prevent garlic from burning and cook until fragrant, about 1–2 minutes. (2 minutes)
  4. Pour in chicken broth and heavy cream. Stir to combine and bring to a gentle simmer. Add uncooked pasta and stir to evenly submerge. (5 minutes)
  5. Cover and simmer, stirring occasionally, until pasta is al dente and sauce thickens, about 12–15 minutes. Return cooked chicken to the pan halfway through cooking to warm. (15 minutes)
  6. Stir in basil pesto and grated Parmesan cheese. Mix gently until sauce is creamy and smooth. Taste and adjust salt and pepper. (3 minutes)
  7. Garnish with fresh basil leaves if desired and serve immediately. (2 minutes)
