  • 1 cup milk of choice (whole milk, oat milk, or unsweetened almond milk)
  • 1/3 cup plain Greek yogurt (or dairy-free coconut yogurt)
  • 2 tablespoons chia seeds
  • 12 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract (pure vanilla)
  • Pinch of salt
  • 1 ripe banana (yellow with brown spots)
  • 2 tablespoons creamy peanut butter (natural, no added sugar)
  • 1 tablespoon peanut butter (for swirling on top)
  • Additional banana slices (for topping)

Instructions

  1. Mash half of the ripe banana in a mixing bowl with a fork until mostly smooth with a few small lumps.
  2. Add the milk, Greek yogurt, maple syrup, and vanilla extract to the mashed banana. Stir until fully incorporated and smooth.
  3. Pour in the rolled oats, chia seeds, and pinch of salt. Stir until well combined. The mixture will look liquidy—this is normal.
  4. Add 2 tablespoons of peanut butter to the oat mixture and stir vigorously until mostly incorporated, leaving some small swirls.
  5. Divide the oat mixture evenly between two 16-ounce mason jars or airtight containers, leaving about an inch of space at the top.
  6. Drop the remaining 1 tablespoon of peanut butter on top of each jar, dividing evenly. Use a knife or spoon to create gentle swirls through the top layer without fully mixing in.
  7. Slice the remaining half of the banana and arrange the slices on top of each jar. Gently press them down so they are slightly submerged in the liquid.
  8. Seal the jars and refrigerate for at least 6 hours, but ideally overnight (8-12 hours).
  9. In the morning, stir the oats to redistribute the banana and peanut butter. Add extra toppings if desired (e.g., honey, granola, additional banana slices). Serve cold or at room temperature.

Notes

For best texture, use rolled oats (not quick or steel-cut). The banana should be very ripe with brown spots for natural sweetness. Let the jar sit on the counter for 10 minutes before refrigerating to help chia seeds start absorbing liquid. Oats keep in the fridge for up to 4 days; texture softens over time. Do not freeze. If eating warm, microwave for 45-60 seconds or warm on stovetop over medium-low heat for 2-3 minutes.
