This creamy slow cooker green bean casserole with crispy onions is a hands-off, crowd-pleasing side dish perfect for holidays and potlucks. The layering technique ensures a rich, creamy base and a crunchy onion topping that stays crispy.

Ingredients

Scale
  • 4 cans (14.5 oz each) cut green beans, drained
  • 2 cans (10.5 oz each) cream of mushroom soup
  • 1 cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • 2 cups French’s crispy fried onions
  • ½ cup reserved crispy onions for garnish
  • 1 cup shredded cheddar cheese (optional)
  • ¼ cup grated Parmesan (optional)
  • 8 oz sliced mushrooms (optional)

Instructions

  1. Drain the green beans well in a colander for 5 minutes, patting dry with paper towels if needed.
  2. In a large bowl, whisk together cream of mushroom soup, milk, garlic powder, onion powder, pepper, salt, and nutmeg until smooth.
  3. Layer half the green beans in the bottom of a greased 6-quart slow cooker.
  4. Pour half the soup mixture over the beans and spread evenly.
  5. Sprinkle 1 cup of crispy onions over the soup layer.
  6. Repeat layers with remaining green beans, soup mixture, and another cup of crispy onions. Gently press down with a spatula.
  7. Cover and cook on LOW for 3 to 4 hours. Do not cook longer than 4 hours.
  8. Check at the 3-hour mark; the casserole should be bubbling and the sauce thick.
  9. About 15 minutes before serving, sprinkle the reserved ½ cup of crispy onions on top. Cover and cook for 15 more minutes.
  10. Let the casserole rest for 5 minutes before serving.

Notes

Drain green beans thoroughly to avoid a watery casserole. Cook on LOW only; high heat can cause curdling or mushy beans. Add the final crispy onions just before serving to keep them crunchy. For a gluten-free version, use gluten-free soup and crispy onions. For a dairy-free version, use dairy-free soup and oat or coconut milk.
