A quick and easy overnight oats recipe that combines creamy cheesecake flavors with fresh strawberries and a crunchy graham cracker crumble topping. Perfect for a wholesome breakfast or snack.

  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) milk of choice (whole milk, almond, or oat milk)
  • 3 oz (85g) plain cream cheese, softened
  • ½ cup (120g) plain full-fat Greek yogurt
  • 2 tbsp (30ml) honey (or maple syrup)
  • 1 tsp (5ml) vanilla extract
  • 1 cup (150g) fresh strawberries, chopped
  • ¾ cup (90g) graham crackers, crushed
  • 2 tbsp (28g) unsalted butter, melted
  • ½ tsp (1g) ground cinnamon (optional)

Instructions

  1. Crush the graham crackers in a resealable bag using a rolling pin or hands until fine crumbs form. Mix in melted unsalted butter and ground cinnamon if using. Set aside to crisp up (about 5 minutes).
  2. Whip the softened cream cheese in a large bowl with a whisk or fork until smooth and lump-free (about 2 minutes).
  3. Add Greek yogurt, milk, honey, and vanilla extract to the cream cheese. Whisk gently until well blended and silky (about 3 minutes).
  4. Stir in the rolled oats until fully incorporated (about 1 minute).
  5. Gently fold in chopped strawberries, reserving a few pieces for topping if desired (about 1 minute).
  6. Transfer the oat mixture into a jar or airtight container. Seal and refrigerate overnight or for at least 6 hours.
  7. Just before serving, sprinkle the graham cracker crumble generously on top (about 1 minute).

Notes

Bring cream cheese to room temperature before mixing to avoid lumps. Add graham cracker crumble just before serving to keep it crunchy. Can substitute dairy ingredients for vegan alternatives and honey for maple syrup. Stir oats halfway through soaking if possible for even flavor distribution.
