  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 2 cups fresh baby spinach
  • 1 cup heavy cream (240 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup low sodium chicken broth (120 ml)
  • 1 teaspoon dried Italian seasoning (or mix of oregano, basil, thyme)
  • Salt and pepper to taste
  • 1 tablespoon butter (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning. (About 5 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Once shimmering, add chicken breasts and cook 5-7 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken and set aside. (Approx. 15 minutes)
  3. Lower heat to medium-low. Add minced garlic and sun-dried tomatoes to the same pan. Stir frequently for 1-2 minutes until fragrant, being careful not to burn the garlic. (2-3 minutes)
  4. Pour in 1/2 cup chicken broth and 1 cup heavy cream. Stir to combine, scraping up browned bits from the pan. (2 minutes)
  5. Stir in grated Parmesan cheese until melted and smooth. Add fresh spinach and cook until wilted, about 2 minutes. If sauce is too thick, add a splash more broth or cream. (3-4 minutes)
  6. Return chicken breasts to the pan, nestling them into the sauce. Simmer together for 3-5 minutes to allow flavors to meld. (5 minutes)
  7. Stir in 1 tablespoon butter (optional) for extra silkiness. Adjust salt and pepper to taste. Remove from heat and let rest a few minutes before serving. (2 minutes)

Notes

Pat chicken dry before searing to achieve a golden crust. Avoid burning garlic by cooking it on medium-low heat. Use fresh Parmesan for best flavor. If sauce separates, whisk off heat to bring it back together. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Chicken thighs can be used but require longer cooking time.
