  • Hot honey for drizzle (or honey mixed with a pinch of chili flakes)
  • Fresh herbs like thyme or oregano for garnish (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Crumble 8 ounces of feta cheese into small pieces. Mince 1 small garlic clove finely, and squeeze the juice from half a lemon (about 1 tablespoon).
  2. In a food processor or blender, combine the crumbled feta and 1/2 cup of full-fat Greek yogurt. Pulse and then blend on medium-high speed until smooth and fluffy, scraping down the sides as needed.
  3. Add the minced garlic, lemon juice, 1 tablespoon of extra virgin olive oil, and a pinch of black pepper. Blend briefly to incorporate.
  4. Taste the dip and add a pinch of salt if needed. If too thick, blend in a teaspoon or two of water or more yogurt to reach desired consistency.
  5. Spoon the whipped feta dip into a shallow bowl or plate, smoothing the top with a spatula.
  6. Drizzle 1-2 tablespoons of honey over the surface, followed by a thinner drizzle of hot honey. Garnish with fresh herbs if desired.
  7. Let the dip rest at room temperature for 10-15 minutes before serving for best flavor and texture.
