  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons mayonnaise
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ cup cotija cheese, crumbled
  • ½ teaspoon smoked paprika (optional)
  • Salt to taste
  • A small handful fresh cilantro, chopped (optional)

Instructions

  1. Trim the ends of each ear of corn, then stand the corn upright on a cutting board. Carefully slice each ear lengthwise into 4 to 6 long strips or ‘ribs’.
  2. In a mixing bowl, combine softened unsalted butter, mayonnaise, lime juice, chili powder, garlic powder, smoked paprika (if using), and a pinch of salt. Mix until smooth and well combined.
  3. Using a basting brush, generously spread the elote butter all over each corn rib, ensuring even coverage on all sides.
  4. Preheat the air fryer to 400°F (200°C). Arrange the corn ribs in a single layer in the air fryer basket without overcrowding. Air fry for 10 to 12 minutes, flipping halfway through with tongs, until ribs are crisp and golden brown with charred edges.
  5. Transfer the cooked corn ribs to a serving plate. Sprinkle generously with crumbled cotija cheese and sea salt flakes. Garnish with chopped fresh cilantro if desired.
  6. Serve immediately while hot and fresh for maximum crunch. Optionally, serve with lime wedges.
