  • ½ cup (120g) plain full-fat Greek yogurt
  • ¼ cup crumbled feta cheese
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon lemon juice
  • 1 small garlic clove, minced (optional)
  • Salt and pepper to taste for dip

Instructions

  1. Shred the zucchinis using a box grater or food processor into a large bowl (about 2 cups).
  2. Squeeze out as much moisture as possible from the shredded zucchini using a clean kitchen towel or cheesecloth.
  3. In the bowl with zucchini, add beaten eggs, all-purpose flour, grated Parmesan, garlic powder, salt, and pepper. Mix until well combined. Add more flour if mixture is too wet.
  4. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  5. Form the batter into small patties about 2-3 inches in diameter using a tablespoon. You should get 10-12 fritters.
  6. Spray the air fryer basket lightly with olive oil spray. Place fritters in a single layer without overcrowding; cook in batches if needed.
  7. Air fry at 375°F (190°C) for 8 minutes, then flip carefully and cook for another 5-7 minutes until golden and crispy.
  8. While fritters cook, combine Greek yogurt, crumbled feta, chopped dill, lemon juice, minced garlic (if using), salt, and pepper in a small bowl. Mix well and refrigerate until serving.
  9. Serve fritters warm with a generous dollop of feta dill yogurt dip on the side.

Drain zucchini thoroughly to avoid soggy fritters. Do not overcrowd the air fryer basket; cook in batches if necessary. Preheat the air fryer for best crispiness.
