These crispy bacon-wrapped jalapeño poppers combine smoky bacon with a creamy, spicy cheese filling for an easy, crowd-pleasing snack perfect for parties and casual get-togethers.

  • 12 medium-sized jalapeños, halved lengthwise, seeds removed
  • 8 oz cream cheese, softened
  • 1/4 cup sharp cheddar cheese, shredded (optional)
  • 12 thin-cut bacon strips
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh cilantro or green onions, finely chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. Wear gloves and slice each jalapeño in half lengthwise. Remove seeds and membranes to control heat. Rinse and pat dry.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  4. Stuff each jalapeño half generously with the cheese mixture using a spoon or small spatula.
  5. Wrap each stuffed jalapeño half with one slice of bacon, securing the ends underneath if possible.
  6. Arrange the bacon-wrapped jalapeños on the wire rack or directly on the foil-lined baking sheet, spacing evenly.
  7. Bake for 20-25 minutes, checking after 15 minutes. Rotate the pan halfway through if bacon isn’t crisping evenly.
  8. Let cool for 5 minutes before serving to avoid burns and allow cheese to set.

Notes

Use thin-cut bacon for easier wrapping and crispier results. If you don’t have a wire rack, place poppers directly on the foil-lined baking sheet and flip halfway through baking. For less heat, remove all seeds and membranes or soak jalapeños in cold water for 30 minutes before stuffing. Let poppers rest 5 minutes after baking to set cheese and reduce mess. Double wrap with bacon or secure with toothpicks if filling leaks.
