These crispy baked buffalo cauliflower bites are a game-day favorite that comes together in under 40 minutes. With a shatteringly crisp exterior and spicy buffalo sauce, they’re a healthier alternative to traditional wings that everyone will love.

  • 1 large head of cauliflower, cut into bite-sized florets (about 45 cups)
  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 1 cup milk (any kind works—dairy, almond, or oat)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/2 cup Frank’s RedHot Original Sauce
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat. Place a wire rack on top if you have one.
  2. Wash the head of cauliflower and cut it into bite-sized florets. Pat them dry with a clean kitchen towel.
  3. In a medium bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  4. In a separate bowl, combine the panko breadcrumbs and grated Parmesan cheese. Mix well.
  5. Working in batches, dip each floret into the batter, letting any excess drip off. Then roll it in the breadcrumb mixture, pressing gently so the crumbs stick. Place the coated florets on the prepared baking sheet in a single layer.
  6. Bake for 20 minutes, then carefully flip each floret using tongs. Bake for another 10-15 minutes until golden brown and crispy.
  7. While the cauliflower bakes, combine the Frank’s RedHot, melted butter, honey, and Worcestershire sauce in a small bowl. Whisk until well combined.
  8. In another bowl, mix the sour cream, mayonnaise, crumbled blue cheese, lemon juice, and chives. Stir gently. Season with salt and pepper to taste. Cover and refrigerate until serving.
  9. Once the cauliflower is done, transfer it to a large bowl. Pour the buffalo sauce over the top and toss gently using tongs until every floret is evenly coated.
  10. Transfer the buffalo cauliflower bites to a serving platter. Drizzle with extra blue cheese dip and sprinkle with fresh chives or green onions. Serve immediately.

Notes

For maximum crispiness, use a wire rack on the baking sheet and don’t overcrowd the pan. Keep the sauce and cauliflower separate until just before serving to maintain crunch. The blue cheese dip can be made a day ahead for better flavor.
