  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 ½ cups (355ml) warm water (110°F)
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • ½ cup baking soda (for boiling bath)
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt or pretzel salt, for sprinkling
  • 3 tablespoons melted butter (for brushing after baking)
  • 8 ounces (226g) sharp cheddar cheese, freshly shredded
  • 4 ounces (113g) cream cheese, softened
  • ¾ cup (177ml) German-style lager or pilsner
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F), sugar, and active dry yeast. Stir gently and let sit for 5 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining 2 cups of flour, half a cup at a time, until dough pulls away from the bowl. Turn out onto a floured surface and knead for 6-8 minutes until smooth and elastic.
  3. First rise: Place dough in a lightly oiled bowl, cover with a towel, and let rise in a warm spot for 15-20 minutes until puffed.
  4. Shape the bites: Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Punch down dough and divide into 4 pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 20-24 per rope).
  5. Boiling bath: Bring 8 cups of water to a boil in a large pot. Carefully add ½ cup baking soda (it will fizz). Working in batches of 8-10, boil dough pieces for 30 seconds per side. Remove with a slotted spoon and place on prepared baking sheet, spacing 1 inch apart.
  6. Egg wash and salt: Beat egg with 1 tablespoon water. Brush each bite with egg wash and sprinkle generously with coarse salt.
  7. Bake: Bake for 12-15 minutes, rotating pan halfway, until deep golden brown. Remove from oven and immediately brush with melted butter.
  8. Make the beer cheese dip: In a small saucepan over medium-low heat, warm the beer until steaming. Add softened cream cheese and whisk until smooth. Gradually add shredded cheddar, whisking constantly until melted. Stir in Dijon mustard, Worcestershire sauce, and garlic powder. Season with salt and pepper. If too thin, whisk in cornstarch mixed with 1 tablespoon cold water. Keep warm over low heat until serving.

Notes

Don’t skip the boiling step—it creates the signature crust. Use freshly grated cheddar for smooth dip. Brush with butter immediately after baking for best flavor. For gluten-free, use a 1:1 gluten-free flour blend with xanthan gum. For dairy-free, use vegan butter and dairy-free cheese.
