  • Pinch of salt
  • 1/2 cup unsalted butter (1 stick), browned and cooled slightly
  • 3/4 cup all-purpose flour
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Peel, pit, and slice peaches into roughly 1/2-inch thick slices. Toss with granulated sugar, brown sugar, lemon juice, vanilla extract, cornstarch, and a pinch of salt. Let sit for 10 minutes.
  2. Preheat oven to 350°F (175°C). Spread sliced almonds on a baking sheet and toast for 5-7 minutes until fragrant and lightly golden. Set aside to cool.
  3. In a small skillet over medium heat, melt unsalted butter. Stir constantly as it foams and begins to brown, about 3-5 minutes. Remove from heat and let cool slightly.
  4. In a medium bowl, combine flour, brown sugar, toasted almonds, cinnamon, and salt. Pour in warm brown butter and mix until coarse crumbs form. Adjust texture with additional butter or flour if needed.
  5. Transfer peach filling into a 9-inch square baking dish and spread evenly. Sprinkle almond streusel topping evenly over peaches.
  6. Bake in preheated oven for 35-40 minutes until topping is golden brown and crisp and filling is bubbling. Cover loosely with foil if topping browns too fast.
  7. Let crisp cool for at least 15 minutes before serving to thicken filling and firm up streusel.
