A quick and easy buffalo chicken flatbread pizza featuring crispy chicken and a creamy blue cheese drizzle, perfect for casual gatherings and weeknight dinners.

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup buffalo sauce (Frank’s RedHot recommended)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 large flatbreads (about 10 inches diameter)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded sharp cheddar cheese (optional)
  • 1/3 cup crumbled blue cheese
  • 3 tbsp buttermilk (or milk with a splash of lemon juice)
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • Freshly ground black pepper, to taste
  • Optional garnishes: chopped fresh chives or parsley, celery sticks

Instructions

  1. Preheat the oven to 425°F (220°C). Place a baking sheet or pizza stone inside to heat for about 15 minutes.
  2. In a mixing bowl, toss chicken pieces with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Heat a skillet over medium-high heat. Add chicken in a single layer and cook 4-5 minutes without stirring to brown and crisp. Flip and cook another 3-4 minutes until cooked through and crispy. Remove from heat and stir in buffalo sauce until well coated. Set aside.
  4. Place each flatbread on parchment paper. Sprinkle half the mozzarella and cheddar cheeses evenly over each flatbread.
  5. Distribute the buffalo chicken evenly over the cheese layer on each flatbread.
  6. Using a pizza peel or back of a baking sheet, transfer the flatbreads on parchment to the preheated baking sheet or stone. Bake 8-10 minutes until cheese is bubbly and edges are golden and crisp.
  7. While baking, whisk together blue cheese, buttermilk, mayonnaise, lemon juice, and black pepper in a small bowl until pourable but creamy. Adjust thickness with more buttermilk if needed.
  8. Remove flatbreads from oven and let cool for 1-2 minutes. Drizzle blue cheese sauce over the top and garnish with chopped chives or parsley if desired.

Notes

Crisp chicken separately to avoid soggy flatbread. Preheat baking surface for a crispy crust. Adjust blue cheese drizzle thickness by adding more buttermilk. Watch flatbreads closely during baking to avoid burning. For gluten-free, substitute flatbread with gluten-free crust or lettuce wraps. For dairy-free, use vegan cheese alternatives and a dairy-free drizzle.
