Crispy, caramelized delicata squash rings glazed with maple syrup and roasted to perfection. A quick and easy appetizer that’s perfect for fall gatherings and dinner parties.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh thyme leaves (optional garnish)
  • Flaky sea salt (like Maldon, for finishing, optional)

Instructions

  1. Preheat your oven to 425°F (218°C). Place a rack in the middle position. Line a large rimmed baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly and pat dry. Trim about 1/4 inch from both ends of each squash.
  3. Slice the squash crosswise into 1/2-inch thick rings. Use a small spoon or your fingers to scoop out the seeds and stringy pulp from each ring.
  4. In a mixing bowl, whisk together the maple syrup, olive oil, kosher salt, and black pepper.
  5. Add the squash rings to the bowl and gently toss until every ring is evenly coated.
  6. Arrange the glazed rings in a single layer on the prepared baking sheet, making sure they are not touching.
  7. Roast for 10 minutes. Do not open the oven door during this time.
  8. Remove the baking sheet from the oven. Carefully flip each ring over. If there is any glaze left in the bowl, drizzle it over the rings now.
  9. Return the sheet to the oven and roast for another 5-8 minutes, until the edges are deep golden brown and slightly caramelized.
  10. Remove from the oven and let the rings cool on the baking sheet for 2-3 minutes. Transfer to a serving platter, sprinkle with fresh thyme leaves and a pinch of flaky sea salt if desired. Serve warm.

Notes

For extra crispiness, ensure rings are evenly coated but not dripping with glaze. Avoid overcrowding the pan. If using an air fryer, cook at 400°F (200°C) for 8-10 minutes, flipping halfway. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 400°F (200°C) oven for 5-7 minutes.
