  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon fine sea salt (plus more to taste)
  • ¼ teaspoon freshly ground black pepper
  • Optional garnish: fresh thyme or rosemary sprigs, flaky sea salt, extra maple syrup

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the middle of the oven. Line a baking sheet with parchment paper or a silicone mat.
  2. Wash and dry the delicata squash thoroughly. Pat completely dry.
  3. Slice off both ends of each squash (about ¼ inch from each tip) and discard. Stand the squash upright on one cut end.
  4. Cut the squash crosswise into rings, about ½-inch thick. Aim for uniform thickness.
  5. Scoop out the seeds and stringy pulp from the center of each ring using a small spoon or your fingers.
  6. In a large mixing bowl, whisk together the maple syrup, olive oil, garlic powder, smoked paprika, salt, and pepper until well combined.
  7. Add the squash rings to the bowl and toss gently until every ring is evenly coated.
  8. Arrange the rings in a single layer on the prepared baking sheet, leaving about ¼ inch space between each ring.
  9. Roast for 12-15 minutes, flipping halfway through. At the 7-minute mark, flip each ring. Return to the oven and roast for another 5-8 minutes until edges are deep golden brown and crispy, and centers are tender.
  10. Let them cool on the baking sheet for 2 minutes before transferring to a serving platter.

Notes

For extra crispy edges, use a wire rack placed on the baking sheet. Don’t overcrowd the pan—give the rings space to roast. Let them cool for 2 minutes after roasting to allow the glaze to set. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 350°F oven for 5-7 minutes to restore some crispiness.
