A quick and easy casserole featuring tender chicken, creamy layers, and a crispy stuffing topping that makes for a comforting and delicious family dinner.

  • 3 cups cooked chicken, shredded or chopped (rotisserie chicken works great)
  • 1 package (6 oz) seasoned stuffing mix (Stove Top preferred)
  • 4 tablespoons butter, melted
  • 1 can (10.5 oz) condensed cream of chicken soup (or cream of mushroom soup for a twist)
  • 1 cup sour cream (Greek yogurt can be used as a healthier alternative)
  • 1/2 cup chicken broth
  • 1 cup frozen mixed vegetables (corn, peas, carrots; fresh can be used if in season)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the stuffing mix with melted butter. Stir until the crumbs are evenly coated and set aside.
  3. Heat a small pan over medium heat and sauté the chopped onion and garlic in a bit of butter or oil for about 3-4 minutes until softened and fragrant.
  4. In a large bowl, combine the cooked chicken, sautéed onion and garlic, mixed vegetables, cream of chicken soup, sour cream, chicken broth, salt, and pepper. Stir until well combined. Fold in cheese if using.
  5. Spread the chicken mixture evenly in a 9×13-inch baking dish, packing it nicely but not overly compressed.
  6. Sprinkle the butter-coated stuffing mix evenly over the chicken filling.
  7. Bake in the preheated oven for 30 to 35 minutes until the top is golden-brown and crispy and the edges are bubbling. Tent with foil halfway through if the topping browns too quickly.
  8. Let the casserole rest for 5-10 minutes before serving to help it set.

Notes

If the stuffing topping feels dry before baking, drizzle a little extra melted butter on top. Let refrigerated chicken come to room temperature before mixing for even cooking. Avoid overloading with liquid to prevent soggy stuffing. For gluten-free, use gluten-free stuffing mix or crushed gluten-free crackers. Cover casserole with foil for the first 20 minutes if in a hurry to retain moisture and prevent over-browning.
