A quick and easy apple cider mimosa with a cinnamon sugar rim that comes together in under five minutes. Perfect for last-minute brunch plans, this crowd-pleasing cocktail uses simple ingredients and tastes like you planned ahead.

  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon water
  • 1/2 cup apple cider, chilled
  • 1/2 cup champagne or prosecco, chilled
  • Ice (optional, but not recommended)
  • Apple slices or cinnamon sticks for garnish

Instructions

  1. In a small shallow dish, combine 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon. Stir with a fork until evenly mixed.
  2. In another small dish, mix 1 tablespoon of honey or maple syrup with 1 tablespoon of water. Stir until combined.
  3. Dip the rim of a champagne flute or coupe glass into the honey-water mixture, rotating gently to coat the entire edge. Let the excess drip off.
  4. Immediately dip the wet rim into the cinnamon sugar mixture, turning the glass to get even coverage. Tap the glass gently to shake off any loose sugar. Set aside to dry for about 30 seconds.
  5. Fill each prepared glass halfway with chilled apple cider (about 1/2 cup per glass).
  6. Slowly pour chilled champagne or prosecco over the cider, filling the glass almost to the rim. Pour gently to avoid disturbing the cinnamon sugar rim.
  7. Garnish with a thin apple slice or a cinnamon stick. Serve immediately.

Notes

Chill the cider and champagne for at least 2 hours before serving. Use a dry brut champagne to balance the sweetness of the cider. Don’t stir the drink after pouring; the bubbles will mix it. For a non-alcoholic version, substitute sparkling apple cider or club soda. Prep the rims ahead of time and let them dry on a tray for up to an hour before serving.
