Instructions

  1. Preheat your oven to 375°F (190°C) and place a baking sheet on the middle rack.
  2. Prepare the peaches: Wash your peaches and slice them into ½-inch thick wedges. You don’t need to peel them. Place the slices in a small bowl.
  3. Make the filling: To the bowl with the peaches, add the brown sugar, cinnamon, cornstarch, vanilla extract, and a pinch of salt. Toss everything together gently with a spatula until the peaches are evenly coated. Let them sit for 5 minutes.
  4. Make the biscuit topping: In a medium bowl, whisk together the flour, granulated sugar, baking powder, and a pinch of salt. Add the cold butter pieces. Use a pastry cutter or two forks to cut the butter into the flour mixture until it looks like coarse meal with some pea-sized butter chunks remaining.
