  • Salt and pepper to taste
  • 1 teaspoon olive oil (optional)

Instructions

  1. Rinse cherry tomatoes under cold water and dry with a clean towel.
  2. Slice off the top quarter of each tomato to create a lid and hollow out the seeds and pulp gently with a small spoon or finger.
  3. In a medium bowl, combine softened cream cheese, chopped fresh herbs, lemon zest, garlic powder, salt, and pepper. Mix until smooth and fluffy. Add olive oil if desired and mix well.
  4. Fill each hollowed tomato with the cream cheese mixture using a small spoon or piping bag. Place the tomato lids back on top.
  5. Sprinkle optional toppings such as crumbled bacon, toasted pine nuts, or red pepper flakes if desired.
  6. Serve immediately or chill in the refrigerator for 15-20 minutes to let flavors meld and filling firm up slightly.
