  • 3/4 cup all-purpose flour (95g)
  • 1/2 cup granulated sugar (100g)
  • 1/3 cup unsalted butter (75g), cold and cut into small cubes
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch baking pan or line with parchment paper.
  2. Peel, core, and thinly slice apples. Toss with lemon juice, 2 tablespoons sugar, and 1 teaspoon cinnamon. Set aside.
  3. In a medium bowl, whisk together 3/4 cup flour, 1/2 cup sugar, 1 teaspoon cinnamon, and a pinch of salt. Cut in cold butter cubes until mixture resembles coarse crumbs. Refrigerate streusel.
  4. In a large bowl, whisk together 2 cups flour, 3/4 cup sugar, baking powder, and 1/2 teaspoon salt. In a separate bowl, whisk eggs, then add melted butter, milk, and vanilla. Pour wet into dry and stir until just combined (batter will be thick).
  5. Spread batter evenly into prepared pan. Arrange apple slices on top in an even layer. Sprinkle cold streusel evenly over apples.
  6. Bake for 45-55 minutes, until a toothpick inserted in center comes out clean or with moist crumbs. If streusel browns too quickly, tent with foil after 30 minutes.
  7. Cool in pan on a wire rack for at least 20 minutes before removing or slicing.

Notes

For best results, use firm apples like Granny Smith or Honeycrisp. Keep streusel cold for a crispier topping. Don’t overmix the batter. Let cake cool at least 20 minutes before slicing. Cake can be stored at room temperature for up to 3 days or frozen for up to 3 months.
