  • 2 thick slices whole grain or sourdough bread
  • 1 ripe avocado
  • 1/2 cup (120g) small-curd low-fat cottage cheese
  • 1 teaspoon (5ml) fresh lemon juice
  • Salt and black pepper to taste
  • 1 to 2 teaspoons (2-4g) everything bagel seasoning
  • 1 teaspoon (5ml) extra virgin olive oil (optional)
  • Optional extras: sliced cherry tomatoes, fresh herbs (dill, chives), red pepper flakes

Instructions

  1. Toast the bread slices in a toaster or toaster oven until golden and crispy, about 3-4 minutes.
  2. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a small mixing bowl.
  3. Add 1/2 cup (120g) of small-curd cottage cheese to the bowl with the avocado.
  4. Squeeze in 1 teaspoon (5ml) of fresh lemon juice and season lightly with salt and black pepper.
  5. Use a fork or masher to gently combine the avocado and cottage cheese until creamy with a slightly chunky texture.
  6. Spread the avocado-cottage cheese mixture evenly over the toasted bread slices using a spoon or butter knife.
  7. Sprinkle 1 to 2 teaspoons (2-4g) of everything bagel seasoning over the top of each slice.
  8. Optionally, drizzle 1 teaspoon (5ml) of extra virgin olive oil over the toast and add sliced cherry tomatoes or fresh herbs for extra flavor.
  9. Serve immediately for the best texture and flavor.

Notes

Drain cottage cheese if too watery to avoid soggy toast. Mash avocado and cottage cheese gently to keep some texture. Toast bread well to hold toppings without bending. Sprinkle seasoning after spreading mixture, not before. Serve immediately for best flavor and texture.
