  • 1 cup (225 g) cottage cheese (full-fat or low-fat)
  • 1 tablespoon everything bagel seasoning
  • ½ cup diced cucumber (English cucumber preferred)
  • ½ cup halved cherry tomatoes
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon sliced fresh chives or green onions (optional)
  • 1 teaspoon lemon juice
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon olive oil (optional)

Instructions

  1. Prepare the veggies: wash and dice the cucumber into small, bite-sized pieces. Halve the cherry tomatoes and finely chop the red onion and chives (if using). Set aside.
  2. In a medium bowl, add 1 cup (225 g) of cottage cheese. Sprinkle 1 tablespoon of everything bagel seasoning over it. Gently stir with a spoon or small whisk until the seasoning is evenly distributed and the cottage cheese looks speckled.
  3. Fold in the diced cucumber, cherry tomatoes, red onion, and chives. Toss lightly to mix while keeping the veggies crunchy.
  4. Drizzle 1 teaspoon of lemon juice over the mixture. Add salt and freshly ground black pepper to taste, being cautious with salt due to the seasoning.
  5. Optionally, drizzle 1 teaspoon of olive oil on top and gently stir for a silkier texture.
  6. Serve immediately or refrigerate for up to 24 hours. Stir before serving again to redistribute flavors.

Notes

If cottage cheese is very wet, drain it slightly to avoid a watery bowl. For a smoother texture, blend the cottage cheese briefly before mixing. Adjust seasoning carefully as everything bagel seasoning contains salt. Store veggies separately if prepping ahead to maintain crunch.
